Place the almonds in a food processor and pulse until finely ground.
Add the pitted dates to the ground almonds and process until the mixture sticks together.
Add the cocoa powder, vanilla extract, and a pinch of sea salt. Process until the mixture becomes a sticky dough.
Line a square baking pan with parchment paper. Press the dough evenly into the pan.
Optional: Sprinkle with shredded coconut or additional chopped almonds.
Refrigerate for at least an hour to set.
Cut into squares and serve chilled.
