If you’re on a quest for the ideal dessert that strikes the balance between heavenly indulgence and mindful nourishment, you’ve perhaps landed in the right place. I first stumbled on the idea for these brownies when I spotted some in a local chocolate confectionery store. After devouring them with a cup of tea, I had to immediately recreate the recipe at home. What I love about this healthy treat is that these brownies satisfy that sweet craving without giving you a guilty conscience. For chocolate addicts like me, these raw (uncooked) brownies use only natural whole foods but there is no compromise on flavour or satisfaction.

Raw Almond, Chocolate and Date Brownies

Equipment

  • Food Processor
  • Baking sheet

Ingredients
  

  • Almonds – 1 cup raw
  • Medjool dates – 2 cups pitted
  • Unsweetened cocoa powder – 3/4 cup
  • Pure vanilla extract – 1 tsp
  • Sea salt – a pinch
  • Optional: Shredded coconut or additional chopped almonds for topping

Instructions
 

  • Place the almonds in a food processor and pulse until finely ground.
  • Add the pitted dates to the ground almonds and process until the mixture sticks together.
  • Add the cocoa powder, vanilla extract, and a pinch of sea salt. Process until the mixture becomes a sticky dough.
  • Line a square baking pan with parchment paper. Press the dough evenly into the pan.
  • Optional: Sprinkle with shredded coconut or additional chopped almonds.
  • Refrigerate for at least an hour to set.
  • Cut into squares and serve chilled.
